Pork Tango

A deliciously easy recipe that the whole family will love! Make the sauce ahead, and save some extra for salad dressing the next day.

Ingredients

  • 1 1/2 lbs pork tenderloin
  • 2 tsp garam masala
  • 2 tbsp olive oil
  • 3 red/orange/yellow bell peppers cut into large wedges
  • 1 mango peeled and pitted
  • 1/2 cup fresh cilantro stems removed
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/2 small onion chopped

Instructions

  • Preheat oven to 450. Place pork in baking dish & sprinkle generously with salt, black pepper, & garam masala. Place pork in oven and cook for 10 mins. Turn pork over and place red peppers on top. Lower oven temp to 400, and continue to cook for another 10 mins, until pork reaches internal temp of 140 degrees. Remove pork from oven and let sit 10 mins before slicing. While meat is cooking, make Tango Sauce: place all remaining ingredients in a blender and blend (for a smooth consistency) or finely chop remaining ingredients (for more of a salsa style sauce). Either way, the flavor is delicious! Serve sliced pork with sauce.

Notes

Serving suggestion: Serve with rice and a steamed vegetable! Leftovers are great over mixed greens with the sauce as a dressing.
